Blue Skinned Mon Calamari?

When I play the Dark Times or see pics from the DT II I think of the same thing, why are mon calamari represented with blue skin instead of orange one?

Most Mon Calamari had salmon-colored skin, often mottled with light and dark patterns, though examples of other skin colors were known.

They appear in many colors, though brown/orange is the most common

I don't mind the question, but the simple fact is that they can be blue, and I like blue. Not a tough answer.
